Job Summary
Directly responsible for all bakery functions including raw material requisitions, preparation of bakery products (breads, pastries and cakes), maintenance of quality standards; sanitation and cleanliness; training of employees in methods of bakery preparation, yields, cost control and sanitation and cleanliness. Also responsible for identifying new business for the Bakery.
Reports to the General Manager.

Responsibilities:
Ensure that all products in the Bakery are consistently produced according to the restaurant’s recipes, yield and quality standards.
Provide orientation of company and department rules, policies and procedures and oversee training of new bakery employees.
Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the Bakery’s preventative maintenance programs.
Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
Be knowledgeable of company policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.
Oversee the training of bakery personnel in safe operation of all kitchen equipment and utensils.
Responsible for training bakery personnel in cleanliness and sanitation practices.
Responsible for maintaining appropriate cleaning schedules for floors, walls, ovens, mixers and other equipment as well as food storage areas

Qualifications/Experience:
A minimum of 5 years of experience in varied Bakery positions from apprentice to head baker.
At least 2 years’ experience in a supervisory capacity.
Must be able to communicate clearly with managers, bakers and apprentices.
